Ricotta pancakes
Light, golden pancakes with berries and honey. For a slow morning or a little afternoon pause.

In a bowl, beat the eggs with the milk and sugar. Add 250 g of ricotta and stir; a few small lumps of cheese are fine.
Small ricotta curds are fine; there is no need to beat them out. Add the flour
In another bowl, mix 120 g of flour, 1 tsp of baking powder and a pinch of salt. Fold into the wet ingredients just until combined.
A thick, slightly lumpy batter; fold only until combined. Cook over a medium heat
Heat a non-stick frying pan and brush with a thin coating of oil. Add small spoonfuls of batter, leaving room to turn them. Cook the first side for about 2 minutes, until the edges begin to set and the underside is golden.

Turn with a spatula and cook the other side for about 2 minutes, until the centres are set. If the pancakes brown too quickly, lower the heat. Repeat with the remaining batter.

Serve warm with washed berries and honey.

Add the berries and honey at serving time. The pancakes can be made ahead and warmed before eating.
